Keto Pumpkin Bread

Ingredients

1 2/3 c Almond Flour

1/2 c Protein powder

2 Tbsp Coconut Flour

1/4 tsp Himalayan Salt

1 tsp ground Cinnamon 

1/4 tsp ground Nutmeg

1/4 tsp ground Cloves

1 Tbsp Baking Powder

½ c  Butter, melted

4 Large Eggs. beaten

1 tsp Pure Vanilla Extract

1/3 c Pure Maple Syrup (optional)

1 Tbsp Apple Cider Vinegar

2/3 c Pumpkin Purée 

Method

  1. Heat oven to 350 degrees F.
  2. Butter or oil a bread pan or use parchment paper.
  3. Mix all “dry” ingredients in a large bowl.
  4. In a medium bowl, combine all “wet” ingredients.
  5. Mix all wet ingredient into the dry ingredients until well combined
  6. Pour batter into bread pan and place pan in the middle of the preheated oven.
  7. Baked for 50-60 minutes. To determine wellness, insert a toothpick. If toothpick comes out clean, it is done.
  8. Take bread out of the oven, and place on top of a cooling rack.
  9. Allow to cool before slicing.
